Emma Spitzer raids the kitchen at Ritz-Carlton Abama in Tenerife

Abama is one of those hotels that leaves a lasting impression and for me it was definitely the food, well really the breakfasts! Never one to pass by a pancake station when on holiday, Abama’s did not disappoint. My only criticism was being put in the position of having to choose between those and the waffles (how they could put such hard choices in front of a Gemini is just cruel.)

Then, as if to really test my limits, they put out baskets of some of the most delicious muffins I had ever encountered. Yet again I found myself knocking on the kitchen door asking sweetly for the recipe of my favourite, the Apple and Cinnamon. The obliging chef emailed it to me on my return and it has been a much loved and used recipe ever since.”

Apple & Cinnamon Muffins


1 large eating apple, peeled and very finely chopped

1 cup of sugar

1 cup of buttermilk

2 cups of plain flour

1 tbsp of cinnamon

2 large eggs

2 tsp baking powder

60gr butter, melted

½ tsp salt

For the crumble top

1/3 cup of brown sugar

¼ cup of flour

½ tsp cinnamon

1 tbsp melted butter


Put the oven onto 160 (fan) 180 conventional

Whisk the flour, sugar, baking powder, salt and cinnamon together in a large bowl. Add the chopped apples. Whisk together the buttermilk, melted butter and eggs and stir through flour mixture gently; do not overmix!

Fill each muffin case3/4 full and then mix all the crumble ingredients together with a fork and sprinkle generously over the top of each muffin. Bake for 18 minutes then cool in the tin for a further 5 minutes before demolishing with a cup of tea!
